Berry Mousse

 

Dr. Ashley developed this recipe for those with chronic illness and autoimmune conditions in mind as it is free of common food triggers.  Of course this recipe is enjoyed by anyone, but know that it is free of eggs, dairy, and nuts.  Photographed here is a raspberry mousse; but this recipe can be prepared with your favorite organic berries.  Strawberries are lovely in this recipe.  This sweet, wholesome treat is perfect for anytime of the year, especially Valentine's day! 

 

INGREDIENTS

16 ounces full-fat coconut milk, chilled

1 1/2 cups organic berries, fresh or frozen

2 tablespoons of monk fruit sweetener, raw honey, or your preferred wholesome sweetener

1 teaspoon vanilla bean powder

1 1/2 tablespoons responsibly-sourced gelatin

 

Add the coconut milk, berries, and raw honey to a high-speed blender or food processor.  Blend until well combined and the coconut milk is starting to thicken; about a minute.  Add the gelatin and blend until incorporated.  Pour into small serving dishes and chill before serving.  Top with fresh fruit or coconut whipped cream before serving.
